Spring is here!

Let’s shout it from the rooftops shall we – spring is here!!

Finnaly waking up in the morning is a joy. You open your eyes and look at the sun shining through the cracks and you KNOW today is going to be a good day.

Spring means changes to my routine though:

  1. waking up earlier
  2. being outdoors more
  3. totally different food cravings

Take today’s and yesterday’s breakfasts for instance:

Yesterday’s:

Chocolaty overnight oats ( 1/2 cup oats, 3/4 yogurt, 1/4 milk with 1/2 banana, flax and cocoa powder mixed in

Today’s:

Oat bran with cooked in banana and cocoa powder topped with coconut banana butter (the scary brown stuff on top :P))

During the winter months I would have definitely enjoyed todays breakfast a lot more. But today it seemed stangely lacking, good mind you, but not what I REALLY wanted. As opposed to warm, filling and comforting I wanted cool, creamy and refreshing. I guess I know what’s on the agenda for tomorrow 😛

I had a driving lesson in the morning, and while walking home I realized that the last thing I wanted to do was stay in the house. Since I had no other pressing obligations I decided to pack a picnic lunch and go for a long walk.

These two little munchkins were forced to decided to accompany me:

After a good 30 minute walk we stopped at the square to have lunch

I don’t know what is about eating outside that makes the plainest of foods taste amazing, but I really enjoyed my simple lunch today:

A marinated tofu and spinach/mushroom sandwich (with un-pictured carrots sticks and apple on the side)

It seemed I wasn’t the only one with that sentiment.

Then it was time to go home…

The problem with taking little children for long walks is that they are utterly exhausted around the same time you start getting tired. So while you could make it back home no sweat it takes a little more effort to drag two little dwarfs back to their home and into their little beds. Thankfully cookies make a great motivator and soon they were sleeping soundly.

As much as I would have liked to I was unable to afford that luxioury. I settled for house chores, a cup of coffee and a quick snack of almonds, figs and a cracker with cottage cheese before heading out once again. This time I was volunteering at a afternoon club for underprivalaged kids.

And I learned that although I may not be the best math tutor, I’m great fun to play tag with.

I came home too late to want to cook, and with leftovers that needed eating, so I ended up with a very green dinner (proof I hat 1/2 an avocado that needed to be used that day):

This meal (although admittedly very ugly looking) was actually really tasty, especially the avocado, hummus, cheese combo. There’s just something about the flavors that just works (it was so good I actually had the same combination on a cracker a few minutes later). And I successfully used up the rest of that avocado! I’m recently realizing that my body operates much better on a higher amount of fats then I previously though, but that’s for another post.

Alright, all that walking today (not to mention the countless tag games) is making my bed look more and more appealing by the moment. Goodnight all!
