Veggies first thing in the morning – why not? Especially when they taste so good.
Vegan carrot cake overnight oats.
The night berfore combine:
1/2 cup oats
3/4 cup soya milk (or more)
1 tbsp ground flax
a handful of rasins.
The next morning grate in 2 medium sized carrots and give everything a good stir. Top with some roasted almond or walnuts and DEVOUR.
(Be sure to stir well as the rasins tend to settle to the bottom, and they are one of the best parts 🙂 )
