Thank you all so much for your feedback on my last post – I loved reading all of your comments and thoughts on the subject.
One of the things I’m enjoying most about being home for spring break is finally having the time to cook again. Even though I’m still keeping myself pretty busy (being the work-a-holic that I am), I’m spending significantly more time in the kitchen, which is great fun.
Here are some of my favorites from the last few days:
“Cheese Danish oats”
½ a cup of quick oats (although any variety of oatmeal or oatbran will do)
1 cup milk/water
Handful of raisins (you can also add thinly sliced banana for that hint of sweetness)
1 TBSP ground flax seed
¼-1/3 cup cottage cheese
Vanilla essence.
Add the quick oats, liquid and raisins in a pot and cook on low till the mixture begins to very slightly bubble and is still very liquidy. Add in cottage cheese and continue cooking for a few minutes or till it’s completely melted in. Add flax seed, and vanilla and cook for another minute or till it’s reached the desired consistency. Serve with nut butter, jam, or whatever else you like J
Creamy, delicious and FILLING. This is one of the few breakfasts that can keep me going for 3 -4 hours – definitely thanks to the protein in the flax and cottage cheese. If you’ve never tried cottage cheese in oats I highly encourage you to.
A twist on Mama Pea’s chickpeas and dumplings (I used a variety of veggies and white beans for the base along with a thickened vegetable broth). Another easy, comforting, delicious meal.
Chocolate covered Katies Brownie batter dip – lived up to all my expectations of it.
And today’s latest experiment – a hummus stuffed omlett (not sure if any of you have ever tried the combination, but I found it fantastic). I imagine adding some sauted spinach and cheese would have taken it till the next level, but unfortunatly I didn’t have that available
And now I’m going to sleep with a house that smells deliciously of chocolate cake (which my simblings will be devouring for breakfast tomorrow). It’s good to be home…

I never would have thought to use hummus inside of an omlett — that’s so cool!
Yum! I need to spend more time in the kitchen. I used to bake all the time but I’ve barely done any this year.
The hummus omlett sounds really good. I’ll have to try that.
